What are sushi bowls? They are basically deconstructed sushi rolls in a bowl! Sweet and tangy sushi rice, crispy breaded shrimp, fresh vegetables, toasted sesame seeds and then drizzled with an amazing sushi bowl sauce.

It's bursting with flavor, easily adaptable, and perfect for those hectic weeknights. Customize to your heart's content by adding as little or as much of each ingredient as you desire. It is a perfect meatless meal for Lent dinners.

Sushi are always a family favorite when dining out. Its exquisite layers, vibrant colors, flavors, textures and bite-sized portions captivate us. However, my homemade attempts never quite match the stunning creations of Japanese sushi masters. The solution? Layer it in a bowl like the chicken rice bowl or chickpeas rice bowl.

For years, my family has loved this combination of sticky sushi rice, crispy breaded shrimp, creamy avocado, crisp cucumber, julienned carrots, nori, and toasted black sesame seeds, all drizzled with Japanese spicy mayo, which is a slight variation of the dipping sauce served with baked shrimp rolls.

It costs only a fraction of what you'd spend dining out at your favorite Japanese sushi restaurant. Craveworthy!

Ingredients for sushi bowls

  • Sushi rice - I rely on my Instant Pot to effortlessly prepare sushi rice at home. It is fail-proof recipe!
  • Shrimp - A beloved reader's favorite breaded shrimp cooked with almost no oil in the air fryer.
  • Toppings - Use any of your favorite veggies. I like to use cucumber, carrot, avocado, nori and toasted sesame seeds.

How to make?

Step 1 - Prepare sushi rice in instant pot. Pressure cook rinsed short grain rice and water. Season it with sushi vinegar and keep it covered to avoid drying out.

Step 2 - Make air fryer breaded shrimp. Coat raw shrimp in egg batter and then in panko bread crumbs. Air fry until crisp and golden brown.

Ingredients for sushi bowl sauce

  • Mayo - As in the yogurt sauce, it boasts a delicate sweetness and an incredible creaminess.
  • Sriracha - For that authentic spicy Asian mayo.
  • Sugar - Makes it sweet and tasty.

How to assemble sushi bowls?

Place cooked sushi rice in the bottom of the bowl and then top with breaded shrimp, vegetables, seaweed, toasted sesame seeds and then drizzle with the spicy mayo.

How to toast sesame seeds? In a small skillet over low to medium heat, place the sesame seeds. Stir them frequently for a few minutes until you hear a couple of seeds begin to pop or until you smell the aroma of the seeds. Once toasted, allow them to cool completely before storing them in an airtight container. Have leftover sesame? Use it to make the black sesame ice cream.

How to make ahead?

You can make some components of your sushi bowls beforehand to save time.

  • TheJapanese sushi rice can be made up to 2 days ahead of timeand stored in the refrigerator in an airtight container. You can also freeze it for up to 2 months in ziplock freezer bags. Just defrost overnight in the fridge before using.
  • Thespicy sushi mayo can be prepped 2 days ahead.Keep it in the refrigerator, covered with plastic wrap. Let it come to room temperature before serving.
  • Prep veggies and store in the refrigerator.
  • Toast sesame seeds and store in an air tight container
  • For the best texture, shrimp is ideally prepared just before serving to maintain its crispy goodness. However, if you need to make it ahead of time, you can reheat refrigerated breaded shrimp in a preheated 375-degree air fryer for a few minutes. While this will warm them through and help to crisp them up, they may not achieve the same level of crispiness as freshly made ones.

  • Don't like shrimp? Use canned tuna, cooked salmon, fresh or imitation crab instead.
  • Customize the sushi bowls with anything your heart desires.

💡 Do you serve sushi bowls cold or warm? Typically, sushi bowls are served at room temperature. It's essential that the rice is neither too hot nor too cold, and the sushi bowl sauce is best served with dishes that are not warm.

Ingredients

  • 4 cups cooked Sushi Rice
  • 1 pound cooked crispy shrimp
  • 2 tablespoons black sesame seeds toasted
  • ½ English cucumber sliced
  • ¾ cup roughly chopped matchstick carrots
  • 1 nori sheet sliced or chopped into pieces (add more if you like)
  • 1 large avocado diced

Sushi bowl sauce

Instructions

  • Make sushi rice and crispy shrimp as per instructions (Refer links).

  • To assemble, divide cooked rice among 5 bowls (four if you are hungry), Top with shrimp, chopped avocado, sliced cucumber, carrot sticks, toasted sesame seeds and chopped nori.

  • Drizzle spicy sushi bowl sauce on top and enjoy!

    To make sushi bowl sauce, stir together mayonnaise, sriracha sauce and sugar together in a small bowl, until sugar is dissolved.
